Well, let's play a game of good news/bad news. I like to start with the good news. We finally did it: made a flavor for what has turned into our most popular recipe, Instant Pot Coconut Yogurt. This combination of apples and spice with the creamy tart yogurt is like the healthiest apple pie and ice cream! But, well, in yogurt form.
The bad news is that the broken digit I told you all about last week, is still broken. Still broken and in a splint for 2 more weeks. So here I am trying to type with my right-hand index finger sticking straight out. Now I wouldn't profess to be an expert typist when I can use all my fingers and thumbs, so being minus one doesn't seem to improve things for me. Who knew?!
It is seriously one finger and just the tip, but I am struggling. My dexterity for things like wiping my own ass, pouring, cutting, driving, pretty much everything is greatly diminished (Not all at once of course). I am also curious how does someone manage to keep an index finger splint clean?

Hey! It's Raj. I guess I'm finishing this off? I just found out about it now. I have nothing prepared. I've been lost in YouTube land all day while my hot water tank was replaced. I call it “my” hot water tank, not “ours” because whoever built this place has Holley's bathroom connected to a separate water supply (with a fully functional hot hot water tank). My hot water tank serves the rest of the apartment. I've been very frustrated with trying to wash dishes with cold water. So I'm pretty pumped about having that fixed.
And since I've been sitting on my ass all day I haven't prepared anything to eat, but I happen to know there are a couple little jars of Apple Cinnamon Coconut Yogurt in the fridge. It's basically like dessert. Or it tastes like dessert. But since it's so healthy, does that mean I can still eat dessert after my dessert? Because I made my Salted Caramel Cashew Cheesecake again and I can't help myself!

Apple Cinnamon Coconut Yogurt (Instant Pot)
- Total Time: 8-12 hours
- Yield: 4 cups 1x
Description
All the sweet and creamy deliciousness of apple pie with ice cream, but in a healthier format! Apple Cinnamon Coconut Yogurt in the Instant Pot.
Ingredients
- One batch of Coconut Yogurt (made, but not yet in containers)
- 3 cups apples (chopped and cored. Peeled if you want. I recommend an apple that stays firm while cooking like golden delicious or pink ladies)
- 1/4 cup maple syrup
- 1/4 cup water
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
Instructions
- Make our Instant Pot Coconut Yogurt and set aside.
- Combine Apple chunks with the spices, maple syrup and water.
- Stir and bring to a simmer.
- Continue to simmer until it thickens slightly, 15 min or so.
- Spoon into bowls or jars.
- Top with our delicious dairy-free coconut yogurt and refrigerate.
- Prep Time: 30 min
- Cook Time: 8-12 hours
- Method: Instant Pot
