Raj dropped off some Beef mushroom Endive Taco boats. Have you tried them? I bet for you non-beef eaters you could substitute ground chicken or shredded zucchini. MMMNNNNNN… I could eat again. Wait why am I talking about another recipe? Stay on task here Holley. It's summertime and it's been hot and dry where I live. As a result, we are suffering from an outbreak of wildfires (here is a map so you can see).
The valley where I live is full of smoke, and the general feeling is tense as evacuation orders and alerts have been issued to friends and family. I live close to a lake and I hear the brapping of water bombers loading up to douse local fires. The fires themselves are probably of benefit as we suffered a pine beetle infestation (a little about the pine beetle) but unfortunately, most of the fires are interface fires, which means people are being evacuated and their homes are at risk. It makes for some gorgeous sunsets, but our air quality is suffering. And of course, people could lose their homes. Lightning strikes have started a few of the fires, but a good majority are the result of careless humans. It is saddening.
Thank goodness for firefighters and the forestry service, I am hopeful conditions can help them save homes and get the fire under control. Maybe that's what my problem is: I'm stress eating. With every buzz by of the water bombers. Or maybe I'm just hungry. Time to console myself with Bacon Wrapped Asparagus.

Bacon Wrapped Asparagus
- Yield: 20 spears of asparagus 1x
Description
Vegetables are always better wrapped in meat.
Ingredients
- 1 Bunch of asparagus (20 ish stalks)
- 8–10 slices of bacon
Instructions
- Wash and tip the asparagus, I break off the bottom end, because the “woody” un-appetizing part generally breaks off, you run the risk of that “woody” part staying on when you cut the ends.
- Wrap 2 or 3 stalks together in a single slice of bacon. (You can also cut slices in half to make the bacon go farther).
- Grill 8-10 min on med/high heat, turning once.
