Ever throw things together out of hunger and necessity, and they turn out amazing? This was one of those. A bag of pears sitting on the counter and a package of bacon brought together with a delightful balsamic drizzle. Why didn't I think of this before? We have other delicious bacon-wrapped fruits, like Apple Bacon Poppers, or the soon to be timely (Valentine's day is JUST around the corner) Bacon Roses.
What have I been waiting for? Bacon-wrapped pears are the bomb!
I have to be honest with you. I would have never known the magic of bacon wrapped pears with balsamic drizzle if I wasn't doing a paleo challenge. Because when I was starving and would raid the fridge, I would have hit up the cheese drawer and eaten cheese and homemade pickles. But with a paleo challenge laid down for January, all the cheese has been frozen and I have had to think outside the cheese drawer when it comes to snack time.
I Have Dangerously Low Blood-Cheese Levels
This is usual for me: no bread is no problem. With no sugar, I end up with a carb flu and a couple of migraines. The lack of cheese is the worst. I consider eating cheese in my car just about every day. But it is only for 30 days. I can do 30 days.
A few more days and this challenge is over, and I'll be able to eat cheese! I will still eat these bacon wrapped pears with balsamic drizzle, with just a titch of aged cheddar wrapped in with the pears. Hurray for expanding my snack rotation!

Bacon Wrapped Pears with Balsamic Drizzle

Description
Bacon Wrapped Pears with balsamic drizzle is great atop a pile of greens, as an appetizer, a side, or heck… even dessert. Paleo and AIP friendly and super easy!
Ingredients
- 2–4 pears (I used anjou pears, but any variety that will stay firm while baking is great)
- 1 package of bacon
- 2 Tbsp balsamic vinegar reduction
- salt and pepper
Instructions
- Preheat oven to 350F.
- Core and slice pears into 4-8 slices.
- Slice bacon strips in half, lenghtwise, then one strip will wrap two slices of pear.
- Bake in preheated oven 40 ish minutes until bacon is to the desired crispness. I like my bacon still slightly soft.
- Drizzle balsamic reduction overtop.
- Sprinkle with salt and pepper to taste.
Notes
No balsamic reduction? No problem: simmer 1/4 cup on balsamic vinegar over medium heat until it thickens up and reduces. Careful not to scortch it.
When I made this recipe, I quartered the pears, giving us 4 bacon wrapped beauties per pear, I would go thinner slices next time for a higher bacon to pear ratio.
