A yummy, simple, fast side. Great with eggs.
- 3 strips bacon (sugar-free, of course)
- 1 cup radicchio (shredded)
- 1 1/2 Tbsp balsamic vinegar
- Cook bacon in frying pan and take out before reaching the desired doneness.
- Remove from pan and dice into small pieces.
- On medium heat, cook shredded radicchio in bacon fat until soft.
- Add bacon and balsamic vinegar, stir, and remove from heat.
- Easy peasy, lemon squeezy!
