Cherry Paleo Pesto Chicken

Fresh Cherry paleo pesto chicken is the perfect balance of sweet and salty.


  • 1/4 cup paleo pesto
  • 1/4 cup fresh or frozen cherries, pitted and sliced
  • 6 boneless chicken thighs
  • salt and pepper to taste


  1. Preheat oven 350 F.
  2. Place chicken thighs, cherries and pesto in a bowl.
  3. Massage pesto/cherries into the chicken, let sit for 10 min.
  4. Sprinkle with salt and pepper.
  5. Place on a lined baking sheet spooning excess pesto and cherries over top of the thighs.
  6. Bake for 30 min, until the chicken is done.(If using bone-in chicken, cooking time will have to be longer)
