Fresh Cherry paleo pesto chicken is the perfect balance of sweet and salty.
- 1/4 cup paleo pesto
- 1/4 cup fresh or frozen cherries, pitted and sliced
- 6 boneless chicken thighs
- salt and pepper to taste
- Preheat oven 350 F.
- Place chicken thighs, cherries and pesto in a bowl.
- Massage pesto/cherries into the chicken, let sit for 10 min.
- Sprinkle with salt and pepper.
- Place on a lined baking sheet spooning excess pesto and cherries over top of the thighs.
- Bake for 30 min, until the chicken is done.(If using bone-in chicken, cooking time will have to be longer)
