I wanted to tell you about my dating life but I got into the post a couple paragraphs while eating coconut chips out of the bag and realized: I need more time. Hahaha. And also, more coconut chips, they are delicious. Having been on more that 50 internet dates, I am not sure where to start. The question I get asked most often is “What was your worst date?” and again, I don't have enough time to pick just one and tell you about it. The dating stories were on my radar because, hello… “date loaf” is the perfect segway into a dating story. I will be telling some of the laugh-till-you-cry tales, with more than 50 under my belt, well I'm sure you can imagine, I could fill pages.
Why don't I have time to entertain you with my stories? Work is crazy, I have taken on a second store, getting it up and running is a lots of decision making, training and hiring. All of which takes time, and I'm averaging a 10-12 hour work day. I changed cell phones and am learning how to use a new phone, after 7 years as an Apple user. I have converted to a Samsung Galaxy (the same phone as Raj, purely coincidence, he doesn't hide how happy he is that I am moving away from Apple products). I must be a sucker for punishment to learn a new phone operating system in addition to everything else I have going on. Setting up apps and everything: no problem. But existing account passwords… haha, every one is different, and I have NO idea… and I feel like my time is better spent on other things, like making delicious Paleo recipes to share with you! Do you have any tips or tricks on converting Apple to Android? I could use all the help I can get, please leave them in the comments below. In the meantime enjoy this Paleo-ized recipe from a time before cell phones and online dating were invented! A classic recipe that my grandmother used to burn regularly, paleo-ized sweet date loaf.

Date loaf
Description
This classic recipe is plenty sweet without added sugar. Grain free Date loaf with walnuts, a great coffee break snack.
Ingredients
- 12 oz dates, chopped and pitted
- 3/4 tsp baking soda
- 1/4 cup maple syrup
- 3 tbsp coconut oil
- 1 tsp vanilla
- 1/2 cup boiling water
- 1/2 cup walnuts, chopped (optional)
- 2 eggs
- 1/2 tsp baking powder
- 1/2 cup coconut flour
Instructions
- Preheat oven to 350F.
- Combine: dates, baking soda, maple syrup, coconut oil, vanilla, walnuts (optional) and boiling water.
- Mix well.
- Add eggs and continue to mix.
- Sift together baking powder and coconut flour, add to wet ingredients.
- Spoon into lined or greased mini loaf pans.
- Bake at 350F for 35 minutes.
- Allow to cool completely before serving
Notes
If using a regular sized loaf pan bake for 40-50 min and make sure the pan is lined.
Had a giggle. Yes… gramma never did get the concept of what the top oven rack was for.
Always had to cut the bottom off…and the top…and sometimes the sides and ends.
The middle was gaggable …kinda?
The only thing I remember loving was her oatmeal gumdrop cookies. Hard to paleoize them. Good thing an ability, or more, inability to cook wasn’t a genetic trait! 😉
