While you are reading this, I am taking my first ever beach and resort vacation. Somehow my entire life has been spent either, not vacationing, or doing things for other people. Visiting people, attending weddings, spending my time with friends and family. Don't get me wrong, taking a week off work to see and help a friend get married; or a week with your aged granny, being there for a birth: helping out is awesome! This is my first ever “hedonist,” or self-centered holiday. 15 days in Cuba, Raj is coming with me so we will be working on the website, and of course soaking in as much culture, experiences, and food love as possible. And of course I'll be bringing home a few more freckles.
I am ready for this vacation, I have organized my work, it is clean and caught up. My house is relatively clean, I have been diligently using the Kon-Mar (Marie Kondo) method to tidy my house by category. I think I am a little more than half done. I am packed. This post is the last of my responsibilities before 3 weeks of decompressing vacation time.
At this very moment I feel like I am winning at adult-ing. All the things that I have procrastinated for months, have been completed, and it is an amazing feeling. I feel like I am nailing this life thing; with a clean house, fresh mani/pedi and a haircut. It is completely erroneous that until yesterday I had been driving around for the last month with my insurance sticker in the glove box (instead of on the licence plate where it belongs), or that last week my too-long hair tangled and got stuck in the clasp of my bra, giving me whip-lash when I sat down. Those are all distant memories. It is like I was another person back then, a pre-vacation person. A person on the edge, making it thru the morning without spilling food on myself was a chore. Staring at my co-workers with blank zombie eyes, muttering to myself as I wade thru my day.
Look out world, my sparkle is back. 2016 is the year of all years, I'm so glad you'll be with me to enjoy it!!

Golden Beet Salad

- Yield: 4 cups 1x
Description
Golden beet salad is a perfect blend of sweet and tart pickled beets with the crisp crunch of greens. It can get expensive eating clean or paleo in the winter, but winter vegetable save the day! Root vegetable are hearty and usually affordable even in the winter months.
Ingredients
- 1 jar pickled beets
- 4 cups greens (arugula is my favorite, whatever you prefer)
- 4 cherry tomatoes
- 1 avocado
- salt and pepper
- 4 tbsp balsamic vinegar
- 3 Tbsp EVOO (extra virgin olive oil)
- Optional
- 4 tbsp goat cheese if you can tolerate goat dairy
Instructions
- Lay greens on a plate.
- Layer on tomato, and avocado.
- Layer on pickled beets.
- Sprinkle with salt and pepper, and goat cheese if you are using it.
- In a container with a lid combine balsamic vinegar and EVOO, shake and drizzle over beets and greens.
