Have you ever toasted and blended your own spice mix? The homemade curry powder recipe will have you never going back for that store-bought powder again!
Spice blending is not for the faint of heart. Toasting and crushing your spices and blending them together is time-consuming, no lie. I did adjust, using already crushed spices where I could, but obviously all fresh toasted and crushed spices would give you a depth of flavor, unlike any curry you have had before. Unless like us, you just spent a month in India.

Feels like it has been all-India, all-curry recipes since we returned home. But this time of year, slow-cooked and Instant Pot meals, full of spice are what I'm craving. And the smells in our house are totally drool-worthy.
Raj is a spice blend snob. He scoffs at the “hot curry powder” you can buy in a jar, and I never really understood why until we made our own. The depth of flavor is so much better with the fresh spices, which makes sense. As you toast and crush those spices the aroma is unparalleled!

Homemade Curry Powder Recipe

Time to make your own Homemade Curry Powder Recipe. Forget that store-bought stale bottle of spices. Bring on the flavor!
Ingredients
- 3 Tbsp ground coriander
- 3 Tbsp ground cumin
- 2 Tbsp ground black pepper
- 1 Tbsp fennel seed (I toasted seeds aprox 4 min over medium heat and crushed)
- 1 Tbsp black mustard seed (These took a little longer to toast, 7 min over medium heat, then crush or grind)
- 1 tsp freshly ground cinnamon
- 2 Tbsp fenugreek seeds (toasted 4 min and crushed)
- 1 Tbsp ground cardamom
- 2 Tbsp ground turmeric
- 1 Tbsp chili powder
- 10 dried curry leaves (small leaves crushed)
- 1/2 tsp cayenne (I used a full tsp, but I like it SPICY)
Instructions
- One by one toast the spices, they have to be toasted individually because they need to be toasted for different times (note times above in Ingredient List).
- You can use a pestle and mortar or a grinder, manual or electric to crush the toasted spices.
- Combine and keep in an air tight jar (see Notes below).
Notes
I love using swing-top locking Mason jars because they are easy to scoop out and being air-tight, they keep the spice blend fresh.
