I mean really having a deliciously sweet and savory honey garlic roast chicken ready and on your table in less than an hour, it doesn’t get any better- unless of course someone else makes it and does the dishes.
I gotta tell you, I am feeling burnt out. There is never enough time in my day. I “shoulda” all over myself on a regular basis. And I feel guilty. Guilty that I don’t fold my laundry, or pump out recipes. I feel anxious I haven’t been out telling the world about Beautycounter. I feel like I’m always running and never getting anywhere.
My entire life I have been a do-er, and work-life balance isn’t something that comes naturally to me. I exceed expectations, I solve problems and I make the impossible look easy. Why have one job when you can juggle 3? There are 24 usable hours in every day. Sleep is for the weak. Even my dear old granddad would tell me “you won’t remember if you worked today when you are 90”. But the jokes on him, I kept a note so I would remember…
Really I’m not sure what force is driving me. I’m not especially motivated by money or material things. It is possible most of my drive comes from measurable results. Achieving tasks and being an expert. But it is no surprise to anyone, I’m not-so-secretly high-strung, and my body is revolting. The force that once propelled me is fading away.
You may know I struggle with Hashimoto’s, and the usual suspects that go along with that, like adrenal fatigue, but lucky me I also have a genetic disease called Ehlers Danlos syndrome. Most of my life I have been in denial, but some things recently have been entirely undeniable.
So why am I telling you all this? Misery loves company, and I’m hoping you guys will understand why maybe we haven’t been posting as much the last few weeks. I really need to get regrouped and re-energized. But also because if I can make this Honey Garlic Roast Chicken in the state I’m in, ANYONE can. It’s that easy!

Honey Garlic Roast Chicken

Description
A great weeknight dinner, classic with a paleo twist honey garlic roast chicken. This recipe will please the whole family and it’s so easy!
Ingredients
- whole roasting chicken
- 1 cup easy honey garlic sauce
Instructions
- Preheat oven to 350F.
- Put whole roasting chicken in a roasting pan on a rack, liberally brush on honey garlic sauce.
- Place in oven set a timer for 15 minutes, and liberally brush with more honey garlic sauce.
- Repeat again at 30 minutes.
- After 45 minutes remove from oven and serve.
