I have the feeling this recipe will come in handy when it’s time for holiday baking!
- 1 can full-fat coconut milk
- 2/3 cup honey
- 2 tbsp tapioca starch
- Combine coconut milk and honey in a pot, bring to a boil over medium heat, careful not to scorch coconut milk.
- Reduce heat and simmer, whisk in tapioca starch.
- Continue to simmer approx 45 min until it thickens.
Place in a container in the fridge, just give it a shake before you use it, it will separate slightly. Should last a couple weeks.
