Paleo Cherry Chocolate Cheesecake

  • 1/2 cup diced dates
  • 3 tbsp coconut oil or ghee
  • 1/2 cup crushed pecans
  • 1/4 tsp salt
  • 1 tsp lemon juice


  • 2 cups raw cashews soaked 8 hours
  • 1/4 cup cocoa
  • 1/2 cup honey
  • 1 cup cherries fresh or frozen
  • 1 tbsp lemon juice
  • 1/4 tsp salt
  • 3 tbsp coconut milk



  1. In a food processor or blender combine dates and coconut oil.
  2. Add pecans salt and lemon juice, continue to blend until it forms a ball.
  3. Press into a springform pan, or liners.
  4. Refrigerate while you make the filling.


  1. Drain raw cashews and add to food processor or blender.
  2. Add cocoa and honey, blend until the cashews are the consistency of ricotta cheese.
  3. Add lemon juice, coconut milk and salt, blend well.
  4. Add cherries and continue to blend.
  5. Pour into the springform pan or liners over the crust and refrigerate or freeze.
  6. Enjoy!
