Paleo Mushroom Risotto? That's a thing? Sure. There's a picture right there to prove it.
I need a personal assistant while I’m in the shower. I know, you’re thinking something sexual, or that I want someone to wash my back between my shoulder blades, or maybe you think I like to sing in the shower and would just really appreciate a partner for doing duets. All those sound great (and I’d probably get them to rub lotion on that spot between my shoulder blades that I can’t get at), but the key reason is that most of my greatest thoughts come to me while I’m soaped up naked in the shower.
I need someone to dictate to. These amazing thoughts (such as how to solve world hunger, the most amazing recipe that is healthy and delicious that will change the lives of millions and will be named after me, how to restructure the North American economy/energy consumption/agricultural system to move away from corn and soy to improve the health and financial situation of billions. I really coulda used help that day!) come as floods, so by the time I get out of the shower I’m already 13 steps past the initial thought, and when I try to retrace all the details: they’re lost.
I’m one of those people: I need to write things down. To-do lists, schedules, important details, birthdays, names, locations, etc, etc, etc. My memory… it often lets me down. Have you heard of the app “Evernote”? It’s a lifesaver! You can save notes, clip things from the internet, save important details about anything, and it’s accessible from any device! And it’s free!
About 10 years ago I had a book, just a simple black binder with tabbed sections. I called it my brain on paper. Contacts, to-dos, ideas, music to get, books to read, movies and TV shows to watch, and art ideas. I should have had a spot for recipes, but that was in the white binder. And then I lost both books in a move! Crushing. (That will never be a problem with Evernote!) I hadn’t seen those books in at least 7 years. I found them in a box just a few months ago! And guess what? The stuff on The To-Do list? Yeah, I don’t think I had accomplished any of them, hahaha.
So you see, I would be close to a bazillion times more efficient if I had a shower assistant. And everyone could be benefiting from this. So if you know someone… let them know that the pay is basically fresh Paleo food and my company. Right. Maybe we could negotiate something.
***One more comment about Evernote: there are a bunch of additional features and a sweet “Evernote Food” add-on app that is great for clipping/writing/sharing recipes (with or without food porn pictures) on the fly.
- Cook shredded parsnips in chicken stock.
- Cook brown and button mushrooms in garlic and rosemary
- Mix together and add cherry tomatoes.
- Add enoki mushrooms.
- Mmmmm!

Paleo Mushroom Risotto
Ingredients
- 2 cups chicken stock
- 2 cups parsnips (grated)
- 2 cups brown mushrooms (sliced)
- 2 cup button mushrooms
- 1 bunch enoki mushrooms
- 1/4 cup ghee
- 2 cloves garlic (diced or crushed)
- 4 sticks fresh rosemary
- 1 cup grape tomatoes
- Salt and pepper to taste
Instructions
- Simmer chicken stock while you grate parsnips.
- Add parsnips and continue to simmer covered.
- Sauté mushrooms and garlic in ghee (leave out enoki until the last minute).
- Uncover parsnips, let simmer stirring occasionally 10 min or until liquid is gone.
- Add full sticks to sautéing mushrooms and press gently to infuse the flavor.
- Add grape tomatoes.
- Remove rosemary.
- Add parsnips to mushrooms.
- Add enoki mushrooms and cook til soft.
