- 2 peaches (skinned, pitted & cut into 1/2 inch chunks)
- 1 avocado (skinned and cubed)
- 1 green onion (diced)
- 1/2–1 tsp crushed chilies
- 1/2 lime
- 1–2 pinches salt
- Put avocado chunks into a large bowl.
- Squeeze lime juice over avocado, and sprinkle with salt.
- Mix in remaining ingredients and serve.
You could also add 1/4 cup finely chopped cilantro.
Delightful with fish, chicken, pork, omelettes, ice cream, paleo chips/crackers, or just a spoon!
