Primal Cucumber Watermelon Salad is a refreshing salad that will keep you cool on the hottest days. Designed as a pitta-balancing salad.
August is hot where we live. It will be in the mid 70's F well into the night, and around 100F during the day. It is hot and dry, most years we are plagued by forest fires, and the acrid smoke fills the air.
2019 has been a little cooler, a little wetter, and knock on wood, no huge forest fires locally. I mean, the Amazon is burning, which is bad for us all. But the smoke hasn't traveled up to us yet.
This is one of the first summers in my LIFE I haven't worked thru most of. Since I started doing summer childcare for my neighbor at 11 years old, I have always had a job or 3 that was exponentially busier in the summer. Childcare, landscaping, and waitressing (I live in a tourist area). Plus work-life balance is something I struggle with.
What Changed This Year?
I have had a mystery rash that is actually bruising or something, I'll write more about this soon. And while none of the health care professionals know what is wrong, they all agree I have to work less. So here I am, working less… and seriously struggling with it.
Summer is Pitta Season
Earlier this year I worked my way thru a 10-week course to help me make myself a priority. I learned about Ayurveda, and doshas, and how to change my schedule to change my life (that's a really great book, BTW). I learned my primary dosha is Pitta, and summer is also pitta season. Pitta is a fire sign, so how does a fiery person cool down at the hottest time of year? Do you find your self getting angry or irritated when it is hot out? Sometimes I do, and this recipe was born out of that: no desire to cook and a burning desire to be cool. See what I did there? What foods help cool you down? Allegedly a sip or two of aloe vera juice will douse your internal heat, but I don't love the mouthfeel, it's something to get used to. Luckily summer’s fresh produce offers ways to keep cool: cucumbers, mint, cilantro, summer squash (like watermelon), zucchini, coconut juice, and mangos.
