I'm so thankful for delicious healthy food made from quality ingredients. Our Puttanesca Shakshuka with Blue Cheese (or dairy free) is simple but full of flavor bursts. In a lot of ways, it makes me think that there is truly no excuse for eating boring food!
This recipe is based on Holley's Puttanesca Sauce which is great on zucchini noodles or just straight-up in a bowl. Last night I went to an incredible Supper Club at QB Gelato in Kelowna where they had some incredible courses with savory gelatos as key parts. I'm going to have to talk to the boys about a puttanesca gelato idea… Before you get all weirded out and think that I've lost it, we're not talking about a gelato that you would be eating on a hot day with a plastic spoon. These are high-end dishes that use ingredients prepared in gelato form and are then incorporated into the overall dish. I feel like I'm not doing this justice. Maybe just head to our Instagram highlight “Fancy Food” to see photos. And by the way, QB's “normal” gelato is the friggin' bomb too!

Thankfully we filmed that video at the beginning of the week because now the house feels like it's occupied by the walking dead. We're both sick and feeling awful. BUT, we're still eating great food! I've been exploring more Nom Nom Paleo recipes since the beginning of the year, and she has a simple egg drop soup that I made with duck broth that we made in the Instant Pot last week. One of the few things Holley can actually swallow today haha. I'm going to see if I can convince her to make another batch of the Puttanesca Shakshuka with Blue Cheese again today….Print
Eggs poached in a delicious savory red sauce, and topped with an optional blue cheese is a fast and easy meal!
- 2 cups of Puttanesca sauce or your favorite red sauce
- 4–6 eggs
- 1.4 cup crumbled blue cheese
- fresh basil (to garnish)
- Prepare our Puttanesca sauce or your favorite red sauce.
- Bring sauce to a simmer, and remove from heat.
- Preheat oven to 350F.
- Drop eggs into wells spaced through the pan.
- Cover and pop into the oven.
- Bake for 4-9 minutes depending on how you like your yolks cooked. The more time the firmer the eggs.
- Top with blue cheese and fresh basil (optional).
This is DELICIOUS with some fresh sourdough bread!
