OK, I made this raspberry guacamole in the summer which was great on a fresh salad. After tasting it I thought maybe I’d try another bold twist: add chocolate (cacao)! I felt like these were both wins, but I did make a couple alterations after this initial trial. I typically like my guacamole chunky, but the Raspberry Chocolate Guacamole Mousse didn’t look so appetizing like that. By blending it smooth and making it a more uniform texture, it made for a nicer mousse-like dessert topping – fantastic on coconut ice cream!

Raspberry Chocolate Guacamole Mousse
- Yield: 1 cup 1x
Description
This was great over coconut ice cream! Also topped the whole thing with dark chocolate pieces.
Ingredients
- 1 avocado
- Juice of 1/2 lime
- 1/2 chili pepper
- 1/2 tbs minced cilantro
- salt to taste
- 1/2 tsp cacao powder
- 1/4 cup raspberries
Instructions
- Blend all ingredients except raspberries until a smooth mousse-like consistency.
- Dice raspberries and stir into guacamole.
