I’m sorry! I’ve been holding out on you with this Paleo Raspberry Guacamole. I made this earlier in the summer and needed to perfect it before sharing with you. Now that I’ve got it all put together, I found this story that went along with it, from the middle of some hot summer weather while my AC was not functioning. This is the tale I was going to tell at the time:
My bed sheets are currently in the freezer.
The fans are blowing with a bowl of ice water in front of them. I’d like to say that that’s making the difference, but I’m still suffering. My apartment is so hot that I can barely move; stuck to the couch. I needed help: http://greatist.com/happiness/
FYI, the sheets in the freezer: FAIL. Maybe they need to be a little moist first? They were hot by the time I made the bed.
Thinking about the fading heat of the summer, let’s hang on to the memory with this summery guac. I was feeling adventurous when I first made this dip. The raspberry-avocado combination was really pleasant on the salad with chicken.

Raspberry Guacamole
Description
This is really pleasant on a salad with grilled chicken.
Ingredients
- 1 avocado
- Juice of 1/2 lime
- 1/2 chili pepper
- 1/2 tbs minced cilantro
- salt and pepper to taste
- 1/4 cup raspberries
Instructions
- Mix all ingredients together except raspberries.
- Dice raspberries and stir into guacamole.
Notes
Salad involved mixed greens, sliced black olives, cucumbers, tomatoes, grilled chicken, and fried onions.

Sounds really good. Now, the raspberries are finished, but I guess frozen ones would work. What do you think?
