🍆 I know you are thinking we have lost it, that this combo of roasted eggplant and grape soup is just too far. Well… maybe we have lost it but this combo is fantastic. We are so lucky to live in wine country and there are piles of organic local produce and 300+ wineries in the area. Many have amazing restaurants and bistros doing fun adventurous local food.
Seasonally Inspired
I have mentioned a few times, I adore all things, Autumn. We live in an amazing part of Canada fertile with vineyards, orchards, lakes, and forests. Autumn brings gorgeous tree fruits and all things wine. And roasted grapes. Have you ever had a roasted grape? It brings complexity and a depth of sweetness that is hard to explain and must be experienced. We posted a recipe for roasted grape turkey breast that works really well, so if you find yourself with extra grapes, I'd make this as well!
Raj is taking off for a few weeks (he is already gone now that you are reading this), and we went on a bit of a tour checking out the creations of some of our favorite winery bistros and restaurants before they wind down or close for the season. With nearly 300 wineries in our general vicinity, it is impossible to see them all every year. Harvest or late summer I feel is the best time, the tourists have gone home, but it is still nice and locals can enjoy the magic happening in the little restaurants. Liquidity Bistro has a beautiful vista view and Head Chef Matt Martin has created some incredible dishes. Maybe you saw the Ostrich tartar on our Instagram? (Follow us if you aren't already!) It was the genius of Chef Matt that came up with this combo! We just tested and recreated to the best of our memory. And of course, made sure it was paleo friendly!

Roasted Eggplant and Grape Soup

Roasted Eggplant and Grape Soup, I know what you are thinking, how do I feel about this? We felt the same way until we tried it!! One of our local winery bistros @liquiditybistro had it on the menu and we had to give it a shot!
Ingredients
- 1 cup seedless table grapes
- 1 small eggplant in cubes (approx 4 cups)
- 1 large cloves of garlic
- 1 small red onion
- 2 tbsp extra virgin olive oil
- 1/2 tsp salt
- 1 tsp ground ginger
- 1 tsp ground sage
- 1 bay leaf
- 4 cups broth (veggie or poultry – try adding a spicy pepper for a touch of heat)
- ground pepper to garnish
Instructions
- Lay grapes (remove stems), eggplant, onion, and garlic on a pan.
- Drizzle with olive oil, and salt.
- Roast 45 minutes in 350F.
- Put in your Vitamix or blender, pulse until smooth, add broth.
- Add ginger, sage, and bay leaf, stir and bring to a simmer.
- Garnish with black pepper and enjoy.

We used spicy chicken broth – it was delicious with a touch of heat.

Well now *THAT* was a fun experiment! Could NOT resist checking this recipe out and making it almost immediately after i stumbled across it. Thank you for giving my adventurous-eater spirit something to get excited about, LOL! I’ll be making this again and tweaking it a bit, as I’m curious as to whether I might prefer using beef broth rather than chicken next time. oh, by the way: I can totally recommend topping this stuff off with grilled lamb. Mmmmmmmmmmmmmm, mouth was happy with *THAT* decision this afternoon! THanks, guys!! <3
