The other great thing is that Holley made these amazing Rosemary Potato Pancakes from freshly home-grown spuds!
Home-Grown Potatoes
This is apparently extra important because potatoes absorb a lot of things from the soil. Like pesticides. So home-grown potatoes can be a lot cleaner.
Looks like organic spuds are the way to go.
Potatoes. Is there anything less impressive to look at than a raw potato? So how is it that it is so good cooked in nearly any way? It boggles the mind, doesn't it?
I grew up in a family who grew their own potatoes in the summer, dug them up in the fall, and stored them in the cool room in the basement over the winter.
This is the first time since graduating high school that I've been involved in growing potatoes. And it was Holley's first time growing them.

Rosemary Potato Pancakes
I can't get enough of these Rosemary Potato Pancakes. They are everything that my mouth wants: salty, crispy, and a great vehicle for sauce. *drool* Balinese sambal?

Rosemary Potato Pancakes
- Total Time: 22 minute
- Yield: 10 medium patties 1x
Description
- 2 1/2 cups shredded potatoes (about 3 medium)
- 1 tsp salt
- 1/2 tsp garlic powder
- 2 tbsp finely diced onions
- 1/2 tsp black pepper
- 1 egg
- 1 tbsp casava flour
- 1/2 tsp rosemary
- 3 tbsp duck fat
Ingredients
- Shred potatoes into a bowl and cover with water and half a tsp salt, let sit overnight.
- Put in a nut bag, haha, nut bag. And squeeze out the moisture.
- Add 1/2 tsp salt, garlic powder, onion, pepper, egg rosemary, and cassava flour.
- Heat the duck fat over medium heat
- press potato mixture into patties and lay into the melted duck fat
- fry for 3 or 4 minutes and then carefully flip, press into the pan and fry on the second side 3 or 4 minutes.
- Place on paper towel and sprinkle with salt and serve.
- Prep Time: overnight
- Cook Time: 7-10 min
