Instant Pot Ribs

I missed out on these Easy Honey Garlic Ribs the first time Holley made them.  She send me the first two photos below, and the friend I was visiting in Vancouver asked if we should make the 4-hour drive to get some.  That was followed by two minutes of silent contemplation by both of us.  I think the snow was legitimately what ultimately prevented the drive….

New Year's Starts in February

You may remember that my 2018 did not start off so strong, but that I've still got high hopes for this year.  Someone even sent me a meme that said:

I've decided my 2018 will start on February 1st – January is a free-trial month.

100%.  My cough continued over 3 weeks.  Even went to the ER for x-rays to rule out pneumonia and a cracked rib.  (I feel like I told the story about my cracked rib in the Killer Paleo Horseradish post…).

We're both starting the month out at a conference for wellness influencers, ShiftCon, in Irvine, CA.  Getting out of the snow and catching some rays!  YESSSSSS!  This is the perfect start because I am confident that we will connect with some great people that may alter the direction of 2018.  We'll keep you posted.  Watch our social media accounts to see how this trip goes.

Easy Honey Garlic Ribs

  • Total Time: 1 hour 15 minutes
  • Yield: 2 racks of ribs
  • Cuisine: meat

Description

These easy honey garlic ribs (Instant Pot ribs) are sweet and salty and so darn delicious.  Perfect as an appetizer on game day, a snack or main dish! Superbowl snacks anyone?


Ingredients

  • 2 racks of pork ribs (cut into individual ribs)
  • 1 cup of Easy Honey Garlic Sauce
  • green onions (diced, as garnish)
  • 1 cup water
  • Salt to taste

Instructions

  1. Cut the rib racks into individual ribs and place in the Instant Pot on a trivet.
  2. Add 1 cup of water to the Instant Pot.
  3. Press the Meat/Stew button and adjust to 40 minutes.
  4. Make the Easy Honey Garlic Sauce.
  5. Quick pressure release ribs when they are done and lay them out on a rack or broiling pan.
  6. Brush on liberal amounts of easy honey garlic sauce and put under the broiler on high for 4 minutes.
  7. Garnish with green onions and serve.

Notes

You can also use the amazing Fermented Honey Garlic, though you'd need to make that in advance.

You may have noticed that we've been a little quieter on the blog in the last few weeks.  We are working on our first ebook to sell!  (So watch for that, and subscribe for updates if you haven't already).  I am also busy redesigning the website (something I've wanted to do for ages now), which I'm hoping I'll have done by the end of summer – weather-dependant….  And there was a third thing I was going to mention, but I don't remember what that is.

Oh yeah, I have another move coming up.  Yes, I have to leave this beautiful space that I'm in.  I am so lucky to have been here for the past year but it's time to leave.  I'm planning on putting my things in storage for a few months and becoming a nomad for a bit.  So if you have a beautiful space for me to crash in for a bit, please let me know!

OK, I had to look into this all a bit before I got really excited.  It's not like I read mom blogs, so I was not aware of Mamavation.  But I'm so glad that I am now!  Please take the time to read this write-up about Leah.  She has done some really incredible things.  And upon reading about her accomplishments and what drives her and what she's doing with this conference I was really excited to be invited.

It's about educating our audiences and about creating change to make things better for all of us.  Getting access to real food.  Improved labeling of all products including beauty products (you're seen that we are now working Beautycounter, right?  No?!  OK, check this out right now!).

We're excited to be connecting with this community and are looking forward to bringing you more information as a result!

Saucy Watermelon Stacks

  • Cook Time: 0 minutes
  • Total Time: 10 minutes
  • Yield: 2-4

Ingredients

  • 1/2 watermelon
  • 1 large jicama (peeled)

Instructions

*Pick a watermelon and jicama that you will be able to get a 4-inch square out of.

  1. Cut off the top and bottom of the jicama, then square it up by cutting off the sides.  Lay it on its side and cut into 1/2-inch slices.
  2. Do the same with the watermelon.
  3. Stack the squares alternating watermelon and jicama slices, in whatever pattern you like.
  4. Pour sauce over top as desired.

Paleo Fenugreek Curry Sauce

Ingredients

  • 1 clove garlic (finely chopped)
  • 1 tsp ghee (or avocado oil)
  • 1/4 tsp turmeric powder
  • 1 can (400ml) coconut milk
  • 1 Tbsp lemon juice
  • 1 tsp dried fenugreek leaves
  • 1/4 tsp paprika
  • 1/8 tsp (2 pinches) cayenne pepper
  • 1/2 tsp salt

Instructions

  1. Stir coconut milk, paprika, salt, cayenne, lemon juice, and fenugreek leaves together in a large bowl.
  2. Heat ghee over medium heat in a saucepan and saute garlic until golden brown.
  3. Add turmeric and continue to heat for another minute (move to next step before turmeric starts to burn).
  4. Add cream mixture, cooking for another 5-10 minutes (gently boiling) cooking down until desired thickness.

Notes

Serve over everything.
