Sometimes you need fast food. Not that salty processed junk, but food. Good food. Fast. This tomato garlic salad comes together in no time, there is even minimal chopping! I like to have it with eggs in the morning or add some chicken at lunch. It also pulls off a spot on a dinner plate as well. It's like the “little black dress” of salads: Good anytime!
I am away from home again, house/cat sitting. I like it. I get to use different appliances, plates, and light sources. It's like an adventure. I even like living out of a suitcase, or in my case, laundry basket. That's right, I am a classy packer: throw a bunch of stuff in a laundry basket, some paleo baking essentials, and I am ready to go! There is a convection oven here and I am excited to do some baking.
There are a couple of character kitties here. One cat who I have to sneak up on to pet. I was told she would warm up to me but I don't know how fast that will happen to me constantly hunting for her to love. The other cat has a lion's haircut, and is quite chatty. We spent most of today wandering around the house meowing at each other. We bonded. That happens when you spend an entire day chatting with a new friend, even if it is a cat friend.

Tomato Garlic Salad
Description
A quick and easy summer salad, as a side, or add protein to make a meal!
Ingredients
- 1/2 cucumber sliced
- 1/4 onion thin sliced
- 2 tomatoes sliced
- Clove garlic crushed
- 1 tbsp olive oil
- Pinch of salt
- Basil leaf chopped
Instructions
- Combine all ingredients, and mix well.
- Let sit for 10 min or so before serving.
